Our Produce

We produce a range of hand made, fresh and semi-soft artisan cheeses. All the milk that we use comes from our own herd of pedigree Jersey and Red Poll cows and our own herd of dairy goats. We put every effort into producing the highest quality of milk in order to produce the best possible cheese.

The Jersey is able to provide us with a rich and creamy milk that cannot be matched by other breeds, this allows us to produce delicate soft cheese as well as butter. The magnificent Red Poll is a good old fashioned British breed that is native to East Anglia and has long been known to cheesemakers for creating fantastic milk. Once widely milked across Bedfordshire, the Red Polls allow us to produce unique cheese with a true local heritage. Our lovely bearded ladies (the goats) are predominantly Saanen but also include British Alpine, Toggenberg and the odd Anglo Nubian or two! As soon as the milk is out of the udder it goes straight in to the cheese vat where we form our curds and produce our cheese. Fresh, zesty goats cheese made on the farm with milk from our own dairy goats. Pasteurised milk and vegetarian rennet. c. 180g.

Verulamium

Smooth and buttery goats cheese with a delicate, herbal flavour. This matured version of Childwickbury is only made to order. c. 180g.

Full bodied, fruity and luxurious. We mix milk from our own cows and goats to create this cheese. Pasteurised milk and animal rennet. c. 160g.
